Thieboudienne, the national dish

Rice, fish and vegetables: a craft recognised by UNESCO.

Thieboudienne (ceebu jën in Wolof) combines rice cooked in a tomato sauce with stuffed fish and vegetables. The culinary art of ceebu jën has been listed as intangible cultural heritage of humanity since 2021. It is a lunchtime dish, often shared from a common bowl. Saint-Louis claims to be its birthplace.
