FoodPâte, amiwo, akassa: Beninese cuisine
Maize in every form.
Maize pâte is served with okra, peanut or leafy-green sauces. Amiwo is a red pâte cooked in tomato sauce; akassa is a fermented maize paste wrapped in a leaf. In the north, try wagasi, a Fulani cheese often served fried.
Everywhere: aloko (fried plantain) and, for the curious, sodabi, a palm spirit.
